Mango Sorbet

About a quart
  • 2 pounds ripe mangoes, peeled and diced, 4 1/2 to 5 cups
  • 1/4 cup water
  • 1 teaspoon of xanthum gum
  • 3/4 cup sugar
  • juice from one lime
  • 1/2 teaspoon kosher salt, more or less to taste
  1. Blend all of the ingredients together
  2. Store in fridge for 30 minutes to chill
  3. Churn in ice cream maker for 20-25 minutes
  4. Spoon into freezer safe bowl (preferrably not glass)
  5. Store in freezer for 3+ hours to freeze
