- 2 pounds ripe mangoes, peeled and diced, 4 1/2 to 5 cups
- 1/4 cup water
- 1 teaspoon of xanthum gum
- 3/4 cup sugar
- juice from one lime
- 1/2 teaspoon kosher salt, more or less to taste
- Blend all of the ingredients together
- Store in fridge for 30 minutes to chill
- Churn in ice cream maker for 20-25 minutes
- Spoon into freezer safe bowl (preferrably not glass)
- Store in freezer for 3+ hours to freeze
