- Cook ingredients in instant pot for 10 minutes. Natural release for 10 minutes then release remaining pressure.
- Remove and set aside chicken
- Blend together all the ingredients. You can use an immersion blender in the instant pot or use a stand mixer.
- Add the butter, coconut milk and garam masala (and cilantro)
- Add the chicken back in
- Serve with rice
Instant Pot Butter Chicken
Put all of these in the instant pot:
- 1 14-oz diced tomatoes
- 5-6 garlic cloves
- 1-2 tsps ginger
- 1 tsp Turmeric
- 1 tsp cayenne pepper
- 1 tsp smoked paprika
- 1 tsp kosher salt
- 1 tsp garam masala
- 1 tsp ground cumin
- 2 lbs chicken thighs
For finishing:
- 4oz butter
- 4oz coconut milk
- 1 tsp garam masala
- 1/2 cup cilantro (if you want!)
