Instant Pot Butter Chicken

Put all of these in the instant pot:

  • 1 14-oz diced tomatoes
  • 5-6 garlic cloves
  • 1-2 tsps ginger
  • 1 tsp Turmeric
  • 1 tsp cayenne pepper
  • 1 tsp smoked paprika
  • 1 tsp kosher salt
  • 1 tsp garam masala
  • 1 tsp ground cumin
  • 2 lbs chicken thighs

For finishing:

  • 4oz butter
  • 4oz coconut milk
  • 1 tsp garam masala
  • 1/2 cup cilantro (if you want!)
  1. Cook ingredients in instant pot for 10 minutes. Natural release for 10 minutes then release remaining pressure.
  2. Remove and set aside chicken
  3. Blend together all the ingredients. You can use an immersion blender in the instant pot or use a stand mixer.
  4. Add the butter, coconut milk and garam masala (and cilantro)
  5. Add the chicken back in
  6. Serve with rice
