Sorbet Base

Makes about 2-3 cups
  • 1 1/4 cups water
  • 200g granulated sugar
  • 1/2 teaspoon xanthan gum
  • 1/4 cup corn syrup
  1. Combine the sugar and xanthan gum in a bowl and whisk together
  2. Pour water into a medium sized pot and then add the corn syrup. Stir together
  3. Add the sugar mixture and whisk vigorously until smooth
  4. Set the pot over medium heat and cook, stirring often (do not simmer). About 3 minutes — Remove from heat once sugar has disolved
  5. Transfer to an airtight container
  6. Chill overnight
