- 1 1/4 cups water
- 200g granulated sugar
- 1/2 teaspoon xanthan gum
- 1/4 cup corn syrup
- Combine the sugar and xanthan gum in a bowl and whisk together
- Pour water into a medium sized pot and then add the corn syrup. Stir together
- Add the sugar mixture and whisk vigorously until smooth
- Set the pot over medium heat and cook, stirring often (do not simmer). About 3 minutes — Remove from heat once sugar has disolved
- Transfer to an airtight container
- Chill overnight
