- 3 large eggs, at room temperature
- 3/4 cup (94g) all-purpose flour
- 3/4 cup (180ml) whole milk, at room temperature (or nondairy)
- 2 Tablespoons (25g) granulated sugar (Optional)
- pinch salt
- 1/2 teaspoon vanilla extract
- Preheat oven to 400F
- Blend all the ingredients together
- Melt 3 Tablespoons (43g) unsalted butter into a 10 inch skillet for a few minutes
- Pour mixture into skillet and put into the oven
- Cook at 400F for 15 minutes
- Turn down temp to 350F for 10 more minutes
- While the pancake is cooking, simmer berries on the stove for a few minutes to make a sweet fruit sauce
