One cast iron skillet
  • 3 large eggs, at room temperature
  • 3/4 cup (94g) all-purpose flour
  • 3/4 cup (180ml) whole milk, at room temperature (or nondairy)
  • 2 Tablespoons (25g) granulated sugar (Optional)
  • pinch salt
  • 1/2 teaspoon vanilla extract
  • Preheat oven to 400F
  • Blend all the ingredients together
  • Melt 3 Tablespoons (43g) unsalted butter into a 10 inch skillet for a few minutes
  • Pour mixture into skillet and put into the oven
  • Cook at 400F for 15 minutes
  • Turn down temp to 350F for 10 more minutes
  • While the pancake is cooking, simmer berries on the stove for a few minutes to make a sweet fruit sauce
